This is one of our favourite recipes! Not only is it super easy but it’s very flavourful! It’s a perfect blend of sweet and spicy with a little saltiness! We used mushrooms because they absorb flavour really well especially when cooked the right way. If you don’t have mushrooms on hand, you can opt to use tofu or other vegetables that have a very subtle flavour. We had these stir-fried mushrooms with yellow turmeric rice for a plant-powered, filling, and nutritious meal.

Stir-Fried Sweet Chili Mushrooms
3 cups fresh mushrooms of choice or 2 cups mushrooms (soaked in water from dried)
1 tbsp corn starch
1/2 tsp salt
1/2 cup bell pepper, sliced
2 tbsp sesame oil, for frying
Onion leeks, chopped
6 cloves garlic, minced
1/2 tbsp corn starch
4 tbsp SFG Coconut Sugar
2 tsp chili sauce
1/8 cup soy sauce
2 tsp sesame oil
- Add the salt and cornstarch on the mushrooms. Mix and coat the mushrooms well.
- In a bowl, mix all the ingredients for the sauce.
- In a pan, heat 1 1/2 tbsp of oil and then sauté the mushrooms for 2-3 minutes.
- Take out the mushrooms and saute the onion leeks and bell peppers in a little oil.
- Add in the mushrooms, sauce, and then mix well. The sauce will thicken from the corn starch.
- Serve with a bowl of rice and enjoy while hot!
Yellow Turmeric Rice
1 cup rice of choice (we used Japanese rice)
1 cup water
1 tsp turmeric powder
- Rinse the rice and add into the rice cooker.
- Pour in water and mix in the turmeric powder.
- Once cooked, serve the rice with your favourite meal. Enjoy!
