There’s nothing like a glass of hot chocolate on cool rainy days. This hot chocolate recipe is rich, delicious, and dairy-free. We used our iron and magnesium rich raw cacao nibs coated in coconut sugar along with some plant-based milk for a plant-based alternative to the favourite hot chocolate. We enjoyed this glass of hot chocolate with some of our favourite vegan chocolate chip walnut cookies.

1. Finely grind the raw cacao nibs using a blender or food processor.
2. Combine all ingredients apart from the vanilla extract in a small pot. Heat on a stove over low heat.
3. Simmer over medium heat, whisking constantly. Whisk until the cacao nibs dissolve. Stir in the vanilla extract.
4. Taste and adjust sweetness as desired. Strain before drinking.
5. Enjoy while hot.
